Aomori Proteoglycan is made from salmon nasal cartilage. Only food-grade acetic acid and alcohol are used to extract it. However, the technique of immersing salmon heads in vinegar to soften them for the traditional Aomori dish “Hizu Namasu” provided inspiration for a major leap in proteoglycan extraction R&D.
As a result, researchers succeeded in developing a method to easily and efficiently extract proteoglycan from salmon nasal cartilage and achieved mass production.
In recent years, proteoglycan has found uses in food and cosmetics and become a familiar ingredient.
